Cut from center of the ham, this piece delivers the heavenly flavor of Spain’s most prized delicacy. When an entire ham is a bit too much for your culinary needs, the center piece of the exquisite Jamón Ibérico de Bellota is the perfect solution. The nutty and rich flavor of the Jamón Ibérico de Bellota will leave you in awe as it melts in your mouth.
The best way to enjoy this succulent jamón is to eat thin slices freshly carved by hand. Serve the famed free-range ham alongside cheese, olives and other traditional tapas or indulge by making a superior bocadillo sandwich. Use trimmings for savory stews, paella and other traditional Spanish fare.
This flavorful cut of ham is from a famed, ancient breed of pig, the cerdo Ibérico. Compared in class to Beluga caviar or Kobe beef, Jamón Ibérico de Bellota is one of Spain’s most treasured culinary contributions. The diet of the prized pig is what gives this jamón its sought after flavor. Roaming the lush meadows of Western Spain, small groups of Ibérico pigs feast on the distinctive sweet “bellota” acorns of the region.
Each of the exquisite hams hangs for over two years in clean mountain air to cure. They lose over 40% of their weight as the much of the fat melts away and a complex flavor and texture develops. Much less salt is used in curing the hams allowing the exceptional flavor to shine. The resulting ham is deep red and marbled with golden fat that literally melts at room temperature. Serve on a warm plate with a great glass of Spanish wine.
We carve the center piece from the ham in our USDA inspected facility, promising you the freshest piece of meat. No cooking needed, the ham is ready to serve.

"It is everything as advertised. Very good especially served with other meats and cheeses. I think a bone in may be better, but it is far to large."
