Rediscover what a pork tenderloin should taste like! Juicy, tender and marbled, it is miles better than the typical tasteless tenderloin.
These pork tenderloins are from Iberico pigs raised on the Trails End Ranch by Ashly Martin, a third-generation rancher in Comfort, Texas. The pigs roam the countryside eating acorns, grass, herbs, sweet mesquite beans, prickly pear fruit and any other wild foods they can find. This special Texan diet imparts full complex flavor to the pork.
A few years back, a herd of purebred Iberico pigs was flown from Spain to America. When they arrived on the 1,500-acre ranch the hearty pigs felt at home in the hill country of Texas, a similar landscape to the 'dehesa' rangeland of western Spain.
All the Texas Iberico® pigs live outside their entire lives on one ranch, wandering the pasture together with over an acre of rangeland per animal.
