These 100% Iberico pigs flourish in the wild, rugged beauty of the Texas Hill Country, feasting on a rich diet of mesquite beans, acorns and prickly pear. Raised outdoors for over 18 months—three times longer than commercial pigs—these pigs develop exceptional marbling and intense, savory flavor. The result? Pork that’s not just unmatched in quality, but a truly unforgettable culinary experience.
All the Texas Iberico® pigs live outside their entire lives on one ranch, wandering the pasture together with over an acre of rangeland per animal. Texas Iberico® pork is certified Prop 12 compliant, which means the animals are raised with care, meeting or exceeding the animal welfare standards set by California Proposition 12.
You will receive this pork frozen, delivered on dry ice. Thaw before cooking. The USDA recommends cooking all whole cuts of meat (including pork) to 145°F as measured with a food thermometer placed in the thickest part of the meat.
