This sampler of juicy, tender cuts of premium Ibérico de Bellota grilling pork from COVAP will change your concept of how delicious pork can be. Each piece is beautifully marbled, making it meltingly flavorful.
COVAP is Spain’s largest farmer owned cooperative, dedicated to preserving the traditional pasture-raised pork heritage that is a Spanish treasure. They raise their Ibérico pigs on the dehesa pasturelands in the Valle de los Pedroches, an ancient landscape dotted with holm oaks and cork trees. Our Bellota grade pork is the finest on the market – if it isn’t called Bellota, it is not the same.
Ibérico acorn-fed grilling pork cuts included in this combo:
Presa Ibérica de Bellota - Pork Shoulder Steak (19-28 oz): This thick cut of tender, marbled pork is nicknamed "the other red meat." Season with salt and pepper and grill to medium rare for tender slices.
Solomillo Ibérico de Bellota - Pork Tenderloin (19-28 oz): This is what a tenderloin is supposed to taste like! This cut is leaner than the others, with a tender bite and complex flavor that puts all other tenderloins to shame. Cook medium rare.
Pluma Ibérico de Bellota – Pork Loin Steak (20-24 oz): This cut is intensely marbled for a full flavor and a tender bite. The fat will melt away on the grill, bathing the pork in flavor. We think it tastes like a cross between a steak and a slab of bacon.
These Ibérico de Bellota pork cuts will arrive frozen and vacuum sealed. Thaw in the refrigerator and bring to room temperature before cooking. The USDA recommends cooking all whole cuts of meat (including pork) to 145°F as measured with a food thermometer placed in the thickest part of the meat.
These products do not come packed in a gift box and will not be packed separately from other products in your order.
