Ibérico de Bellota comes from black Ibérico pigs that can only be found in Spain. These fortunate animals enjoy an amazing life, wandering the ancient 'dehesa' rangelands of western Spain in small family groups - about two acres for each animal! In the fall, they feast on sweet 'bellotas' - the Spanish word for acorns. The sweet acorns are rich in antioxidants, imparting an amazing texture and healthful qualities to the resulting cured meats. This life of exercise and exceptional diet make this the finest pork in the world.
The beautiful little town of La Alberca sits atop a mountain not far from Salamanca. The Martin family owns Fermín and they employ most of the townsfolk. It is not hard to imagine that this community has a deep understanding of curing hams and sausages, passed down to them over the generations.
Slice your Ibérico de Bellota chorizo as thinly as possible and serve with excellent bread and wine. You can add slices to salads or sandwiches, or dice and add to stews or pasta. We prefer to eat slices of this superb chorizo by themselves, better to enjoy the layers of flavor.
