This white asparagus is so spectacularly huge that each jar holds only one spear! Hand-harvested in Navarra, this giant size is so rare we only get a small number every year. Delicate and tender, white asparagus is usually served chilled with a dollop of mayonnaise or as a special addition to salads.

In the spring, normal green asparagus spears push up through the fertile soil, then are harvested by hand. For white asparagus, the farmers cover the plants with mounds of soil to block the light and postpone photosynthesis.
