The Ibérico de Bellota hams come from the ancient Spanish Ibérico breed, which has roamed the woodland meadows of western Spain feeding on acorns for thousands of years. Jamón Ibérico de Bellota is the pride of Spain, and Spaniards consume the vast majority of the limited number of hams produced in their own country.

A select group of young pigs are allowed to roam the ‘dehesa’ woodlands. In the autumn and winter they feast on acorns that fall in abundance from holm oak and cork trees. They eat so many 'bellotas' (Spanish for acorn) that they add two pounds of weight each day!

The unique genetics and exceptional diet create hams that are marbled with rich golden fat infused with the flavor of the sweet bellota acorns. Remarkably, the hams contain mono-unsaturated fat rich in oleic acid, similar to healthy olive oil.
