This secreto pork flank steak is intensely marbled and perfect for the grill. This cut is very tender with natural sweetness and a deep color akin to a good steak. Ideal for searing and grilling, your guests won’t believe the level of flavor in each bite. 

These 100% Iberico pigs live outside in a ranch on the Texas Hill Country, feasting on a rich diet of mesquite beans, acorns and prickly pear. Raised outdoors for over a year and a half, it’s no wonder that they develop exceptional marbling and complex flavor. 

All the Texas Iberico® pigs live their whole lives outside on one ranch, wandering together on pasture with over an acre per animal. Texas Iberico® pork is certified Prop 12 compliant, which means the animals are raised with care, and the rancher goes above and beyond to care for each and every animal.

Several years ago, a group of purebred Iberico pigs was flown from Spain to the United States. The pigs at Texas Iberico® are descended from those original animals and they have flourished in the Texas Hill Country. 

This pork will arrive frozen, delivered on dry ice. Thaw before cooking. The USDA recommends cooking all whole cuts of meat (including pork) to 145°F as measured with a food thermometer placed in the thickest part of the meat.
