Adiano is a truly special Manchego, family-made in La Mancha. This attractive gift box brings their creations to your with two wedges, so you and your guests can taste Manchego at two stages of aging.
Start with the younger semicurado, aged 3 to 5 months. It is creamy and rich, with just a hint of sharpness. Then taste the curado, aged 6 to 8 months. This version has a nutty complexity, firm yet rich texture and a clean sharpness.
Both cheeses start with the same simple ingredients: milk, rennet and salt. Adiano uses less salt than most, allowing the flavors of the rich sheep’s milk and diet of herbs and grasses to shine.
The wheels of Manchego are aged in cool, humid cellars and turned by hand, a careful process to ensure they age evenly. The result is a Manchego that is balanced and creamy with an elegant nutty finish. The longer it ages, the more the flavors and textures develop.
The name “Adiano” means “excellent” in Castilian, and the world agrees! In the last few years, their cheeses have earned more than thirty awards, including three rare Super Gold medals at the World Cheese Awards.
Behind it all is founder, Ricardo García, who grew up shepherding in the mountains of La Mancha. After years running a respected restaurant in Murcia, he returned home to recreate the Manchego he remembered eating as a child.
On his farm, El Campillo, near Cabañeros National Park, he rebuilt a flock of Manchega sheep and began making cheese the traditional way. Today, he works alongside his son, José Ángel, and both are passionate about making truly great Manchego.
Adiano is also the first artisan DO Manchego producer to earn Welfair™ humane certification. Every wheel is made on their estate from the milk of their 3,500 sheep, raised with care on their own pastures.
