We’re thrilled for you to try these incredibly tender lamb chops from Spain! Rich, meaty and beautifully mild, they’re missing just one thing—the gamey taste of most lamb. Grill over charcoal or sear in a cast iron pan, and you’ll be in lamb heaven in no time.
Each meaty loin rack is sliced into about 24 juicy chops. These irresistible little lamb lollipops are hard to share, plan for at least four per person. For best results, bring to room temperature and season simply with salt and pepper before cooking.
Why are Spanish lamb chops so exceptional? Spanish lambs are nearly half the size of their American counterparts, resulting in a delicate, sweet flavor with none of the gaminess. As my Spanish friends like to joke, Americans are eating mutton and don’t even know it!
These lambs graze freely in the legendary dehesa rangelands of southern Spain, also home to the famed Ibérico pig. After several months, they’re gently moved to COVAP’s Bienestar WELFAIR™-certified finishing center, where they’re fed high-quality grains to enhance their flavor and texture.
COVAP is Spain’s largest farmers’ cooperative, dedicated to animal welfare and exceptional food quality. Located in el Valle de los Pedroches, in the heart of the dehesa, COVAP’s facilities are just steps from the pasture, ensuring minimal transport and maximum freshness.
Sourced from Pozoblanco, a village in the Córdoba region of Spain. Ships frozen. Thaw in the refrigerator before cooking.
