We are so excited for you to try these amazingly tender lamb chops from Spain! Rich and meaty, this lamb is missing just one thing—the gamey taste of the lamb you are used to eating. Grill over charcoal flames or sear in a cast iron pan and you will be in lamb nirvana before you know it.

This meaty loin rack is cut into about 18 tender chops. These little lamb lollipops are addictive, so allow at least four per person. Bring them to room temperature and season with salt and pepper before cooking.

Why are Spanish lamb chops so much better? Most importantly, the lambs are about half the size of U.S. lambs. My Spanish friends joke that Americans actually eat mutton and don't realize it! This young lamb has a delicate, sweet taste with no gamey flavors.

The lambs also live and graze in the ancient dehesa rangeland of southern Spain, home of the famous Ibérico pig. After a few months they are moved to the Bienestar WELFAIR™ humane certified finishing center at COVAP for a few weeks where they fatten up on high-quality grains.

COVAP is Spain's largest farmer's cooperative, focused on animal welfare and food quality. Its facilities are located in el Valle de los Pedroches, in the heart of the dehesa rangeland, minimizing transport time from the local pasture.
