Cornicabra extra virgin olive oil is the famous variety of the Toledo region. It is a robust, peppery oil with a long delicious finish, with notes of green apple and dandelion. Excellent for cooking, we like to use it in rice dishes like paella or for preparing seafood like scallops and salmon. In the ancient region of Toledo, the estate of Casas de Hualdo sits in the beautiful Río Tajo valley. The summers are very hot and dry and the winters are harsh and cold – the ideal environment for olive trees. The owners monitor the health of the trees and the ground moisture carefully so that they can adjust watering and pruning to keep the trees healthy. And healthy trees produce the finest quality of extra virgin olive oil.
Casas de Hualdo has its pressing mill right on the estate, and the fresh olives are cold-pressed within hours of harvest. Olives are essentially a fresh fruit, so if the harvested olives are left in the heat or not pressed quickly, the juice of this fruit will lose quality. Casas de Hualdo offers the very finest olive oil at the peak of quality.
