Each small tuna is line-caught in the Bay of Biscay using traditional line and hook. Whole tuna loins are poached in water, hand-packed and covered with olive oil. The result is a silky tuna with a rich yet mild flavor.
D. José Miguel Mauleón founded Yurrita in 1867. More than 150 years later, the Yurrita family continues the tradition in the town of Mutriku (Guipúzcoa) on the Bay of Biscay. Yurrita is the oldest Bonito del Norte company operating in the Basque Country.
