La Tienda, based in Williamsburg, Virginia, announced today that it is converting its restaurant location at 1325 Jamestown Road into a community kitchen beginning this weekend. La Tienda will offer a set menu on Tuesdays, Thursdays and Saturdays from 4-7pm. Clients are asked to “Pay What They Can” and no one will be turned away. Payment is by electronic means only, no cash, and the meals will be packaged for take-out only. La Tienda is working under the umbrella of the World Central Kitchen, a world-wide effort led by Chef José Andrés to provide hot meals to people in need during times of crisis. 
 
 
La Tienda’s chef and restaurant operator Greg Mincher is overseeing the effort with a small crew. “During these difficult times, we are glad we are able to provide hot meals to those in need. We are grateful to be able to serve this community that has been so supportive of us over the years. World Central Kitchen gave us a great model to follow.” Chef Mincher and his team will be following and enforcing strict sanitary guidelines to safeguard his team and his clients. The days and hours of operation may change, according to the need. 
 
 
Tim Harris, CEO of La Tienda, has been working with José Andrés’ World Central Kitchen to organize the effort. “WCK continues to be a bright light during dark times and José’s vision and model is effective and has impact. Once our community kitchen is established, we plan to provide hot meals to some of the more than 400 children in our Williamsburg community who currently live in hotels and motels. For many of these children school lunch was their only real meal of the day.”

This year La Tienda completed a fundraising effort to donate over $100,000 for food banks across Spain during the recent economic downturn. 
 
The economic crisis in Spain has been devastating and long lasting, with employment rates of over 20% to this day. This prolonged downturn has left many families in Spain hungry, relying on the support of food banks for their next meal. La Tienda owners Tim, Jonathan and Don Harris were deeply concerned. Given their strong personal relationships with many small Spanish food companies and their shared love of Spain with their tens of thousands of customers, they knew they were in a unique position to help. 
 
In Fall of 2012, La Tienda launched a fundraising campaign to support an organization that could reach the those families who were struggling most. The business selected the Spanish Federation of Food Banks (FESBAL), which coordinates the efforts of fifty-four localized food banks across all of Spain. 
 
La Tienda named its effort ‘Campaign for Spain,’ and has raised over $100,000 in donations to bring the effort to a successful conclusion. “We saw the impact the economic crisis was having on Spain and we were very happy to be able to help,” noted CEO Tim Harris. Visitors to the site donate directly to the Campaign for Spain, with no purchase necessary. 100% of the money raised goes to FESBAL and there are no administrative fees taken by La Tienda.

Discover Four of Spain’s Finest Cheeses 

Discover the Spanish side of Jamestown Island's history in a guided walking tour followed by a reception at La Tienda. Discover "Jamestown - The Spanish Story Revealed" and walk back in time through the James Fort site to uncover the hidden story of the Spanish at Jamestown. Spain's history in Virginia precedes that of the English. Spanish explorers sailed into the Chesapeake Bay in 1561 and returned to Spain with the son of a Virginia Indian chief. Baptized Don Luis, he traveled to Spain, Mexico, and Cuba and then returned to Virginia in 1570 with eight Spanish Jesuits to found a mission. Don Luis later led an attack with Virginia Indians on this same mission, ending Spanish Virginia in 1571. Wary of English attempts to settle in Virginia after the 1570s, Spain’s ambassador to England, Pedro de Zuniga, relied on a spy network at the English court. 
 
With tensions mounting, the English built Jamestown and positioned it in anticipation of a Spanish attack. The attack never came but the threat was real: a Spaniard, Don Diego de Molina, was captured and held for five years at Jamestown. In 1613, he smuggled out a letter detailing the conditions at Jamestown and advocated its destruction. Concerns about Spain lingered and served to influence the political decisions of the colony. The hidden story of the Spanish at Jamestown provides new insights and a fresh perspective on the relationship between the two rival European powers of the late 16th and early 17th century. 
 
This program is presented jointly by Historic Jamestowne and La Tienda. Space is limited and reservations are required. Similar to a green onion, though milder in taste, the calçots (pronounced "kal-sotes") are specifically tended so that the lower portion of the stalk is protected by from exposure to sunlight. When harvested in the early spring, calçots are grilled over smoking vine clippings, tinder or charcoal. Eaten one at a time, the steaming, charred exterior of the onion is peeled away to reveal a sweet, tender heart – perfect to dip into romesco sauce: a traditional blend of tomatoes, red peppers, almonds, garlic, olive oil and vinegar. 
 
Calçot season is celebrated in the region of Cataluña, Spain with festivals known as calçotada, the most famous of which takes place in Valls. Donald B. Harris, who with his family founded La Tienda.com, will be awarded Spain’s Official Cross of the Order of Civil Merit at a special embassy ceremony in Washington, D.C. on October 11, 2012. The recognition, one of Spain’s highest honors, will be bestowed on behalf of His Majesty King Juan Carlos I of Spain by Ramón Gil-Casares, Ambassador of Spain to the United States. The award Harris will receive is the Spanish equivalent of the National Medal of Humanities in the United States. 
 
This eminent Order was established in 1926 to recognize the civic virtues of outstanding individuals whose accomplishments have benefited Spain. With this award, Spain recognizes Harris’ extraordinary services promoting the people, culture and foods of Spain here in the United States. “To receive this recognition from the King of Spain on behalf of his people is most meaningful. During my lifetime, my family and I have been honored to know many close and loving families throughout Spain. I am grateful that we are able to work with these good people and to honor their artisan traditions through La Tienda,” said Harris. 
 
Harris first became acquainted with the Spain in 1965, as a young US Navy chaplain when his ship made port calls in Barcelona, Palma de Mallorca, Valencia and Rota. In the 1970s, he and his wife Ruth moved their young family to El Puerto de Santa María (Cádiz), near the Rota Naval Base where he was stationed. As they enjoyed life with their sons in a Spanish neighborhood, they developed a deep appreciation of the intimate dimension of Spanish life, where children are cherished and family ties are central. 
 
Born in Boston, MA, Harris was educated at the College of William and Mary in Virginia, Claremont Graduate School and the Graduate Theological Union in Berkeley, CA. He was commissioned as a Coast Guard officer and subsequently a naval officer where he rose to the rank of captain in the Chaplain Corps. In the navy, Harris was founder and director of CREDO, an ongoing Navy Chaplain Corps program serving sailors, marines and their families. His first book, That’s How the Light Gets In (1995), describes the program, and its spiritual origins. 
 
After retiring from the Navy, Harris founded La Tienda with his family in 1996. His vision was to work with them, focusing on a love for Spain that they all shared. With the Internet newly emerging and food from Spain virtually unknown in the United States, Don, along with his sons Jonathan and Tim, set out to establish one of the first e-commerce sites offering goods from Spain. In 1997, La Tienda.com was the first to sell Jamón Serrano online. 
While the business developed, Harris began writing a blog of Reflections on Spain, which he continues to do to this day. La Tienda is now a flourishing online retailer offering a selection of over 800 gourmet foods and artisanal goods from Spain. Still family-owned and operated, the business is dedicated to working with artisan and small family producers in Spain. 
 
Headquartered in Williamsburg, Virginia, La Tienda has warehouses in both Virginia and Alicante, Spain, that ship throughout the United States, Puerto Rico, Canada and Europe. The resulting site is a direct reflection of that collaboration. 
 
One of the main components of the site is the Spanish food “flash cards,” with audio links featuring pronunciation of each term by a native of Spain. To make the recordings Hager worked with Raquel Nicholson, one of La Tienda’s Customer Service Representatives. Nicholson was born and raised in Madrid and has been an employee at La Tienda for many years. “Raquel’s voice is kind, warm and spirited in the recordings,” Hager commented. “We hope that listening to her will give students confidence that they can learn to speak like a Spanish native themselves.” 
 
Another feature of the Learning @ La Tienda site is the “Hablo Images.” These pictures of modern Spain, taken by the Harris Family, founders of La Tienda, are intended to be a “conversation starter” in Spanish classes of any level. The photos offer a glimpse into contemporary Spain. A Unique Look at the Food, People and Soul of Spain

Chorizo Made from Humane Pork Named "Best New BBQ Sausage"

The Aztecs believed it possessed mystical powers and even considered it a potent aphrodisiac. It was known as nanha to the Hopi, and wesa by the Cochiti. Other names include cuitlacoche, corn smut, maize mushroom, maizteca mushroom and Mexican truffle. Huitlacoche, the Nahuatl (Aztec) word for this edible fungus, could not be cultivated until relatively recently.

Rural Mothers Cook Up a Rescue for Town and Tradition

Toano, VA (PRWEB) June 23, 2009 -- At the end of the twentieth century, the Mangalica (mahn-gah-lee-kah) pig from the steppes of Hungary faced extinction due to the ravages of two world wars and the industrialization of meat production. In 1991, Juan Vicente Olmos, a leading figure in the production of ham in Spain, sought out and purchased the remaining breeding stock of this venerable breed to avert this disaster. He recognized that the Mangalica was genetically similar to the iconic Cerdo Ibérico of Spain, source of Europe’s finest ham. 
 
Like the Ibérico, the meat of the Mangalica is marbled with beneficial fat and bursting with flavor. Remarkably, both the Mangalica and the Ibérico meats are rich in monounsaturated fatty acids (more than 50%). 
 
The possibility of saving this special breed motivated Juan Vicente Olmos, head of Monte Nevado - a quality ham producer in Spain, to join with Hungarian agricultural scientist Peter Tóth to acquire every Mangalica pig they could identify. In 1991, there were only 198 purebred Mangalica pigs in the country, and 30 breeding sows. These big hearty pigs could only be found on a few farms in the remote steppes of Hungary. 
 
Olmos and Tóth entrusted their rare animals to local Hungarian farmers who raise them the traditional way. To this day, the Mangalica pigs live a happy farm life and occasionally roam the rolling meadows of their native land. These wooly snow pigs stay in barns where they live in large groups, under "pig friendly" conditions. During their lifetime, the pigs are given plenty of opportunity for exercise, unlike ordinary commercial pigs of today. 
 
After the Mangalica pigs are slaughtered in Hungary, the meat is brought to Spain by Monte Nevado to be cured in the rugged mountains of La Rioja, following the traditional Spanish regimen. When the ham cures naturally in the cool mountain air, the extra marbling permits the luxury of a longer cure - resulting in a higher flavor and taste profile. The result is a delicious, sweet and supple ham cured in Spain, new to the world market. 
 
In less than 20 years, Olmos and Tóth have accomplished a dramatic recovery for a nearly extinct species. Today Monte Nevado breeds 8,000 pigs on its own farms, and controls the breeding of an additional 12,000 pigs on farms in the surrounding regions of Hungary. Even at that level, the supply of these rare hams is severely limited.

The fabled Iberico de Bellota hams are from pigs of an ancient breed, Cerdo Ibérico, which graze free-range in forest meadows and gorge on acorns, giving the hams a unique taste and healthy fat similar to olive oil. This venerable breed is differentiated from the garden variety pink pig by the color of their hoofs, which are normally coal black. For this reason, they have been traditionally referred to as "Pata Negra," or "black hoof." 
 
There was a scandal in Madrid 9 or 10 years ago when a company was caught painting the hooves on its white Serrano hams black in order to pass them off as the far more valuable Iberico Pata Negra. Apparently, some of the paint finally rubbed off on an unsuspecting shopper and there was public outrage. 
 
The newspapers followed the story, chronicling the plight of the duped ham lovers and the evil doers who had sold them a faux Ibérico ham with a painted hoof. The government finally intervened, and the populace was calmed. Even today, you can spot the occasional ham shopper in Spain rubbing the hoof to make sure that its color is natural. 
 
After January, the Iberico hams imported into the United States will be identical in quality, but without the hoof. Producer Embutidos & Jamones Fermín of La Alberca, Spain is concerned about the fall out from being required to remove the hoofs. Owner Santiago Martín addressed his distributors saying, "We hope this new development does not raise suspicion from our customers. We would like to reassure them and guarantee that Fermín Ibérico ham is 100% from the Ibérico breed. in spite of the lack of hooves, the hams are truly the Ibérico breed, or Pata Negra, and we guarantee this unequivocally."
