Go Wild With Bivalves
Seafood can be a more climate-friendly choice than meat, but knowing what to buy can feel like a paralyzing exercise. What’s a fish lover to do? One choice you can always feel good about: Eating more bivalves like mussels and clams (not to be confused with crustaceans like shrimp and lobster, which can require a ton of resources to farm, resulting in a higher carbon footprint). When it comes to seafood, farmed clams (vongole!), mussels (escabèche!) and oysters (on the half-shell, obvs) have some of the lowest carbon emissions around. Plus, farmed bivalves can naturally improve the water quality in their environment, leaving it cleaner and better than how it was before. So the next time you’re having an existential seafood crisis, pick up a couple pounds of clams for spaghetti night and rest easy. Or hop on the trend overtaking pretty much every natural wine bar we love right now and crack open a couple of tins of high-quality canned bivalves, like these plump and vinegary mussels in escabèche sauce. Pair them with crusty bread and a chilled, crisp white wine for a classy little snack.
