Place bread slices on an ungreased baking sheet. Bake at 400°F for 8-10 minutes, or until lightly browned. While bread is baking, slice baby Manchego cheese into 36 small pieces, each about 1 1/2 inches in diameter. Then slice Sobrasada into 36 thin rounds, each about 1/8 inch thick.
Remove bread from oven. Layer one slice of Sobrasada followed by one slice of baby Manchego cheese on each piece of toasted bread. Return baking sheet to oven and bake for approximately 10 minutes, or until cheese is melted and slightly browned. Serve warm.
