Place bread slices on an ungreased baking sheet. Bake at 400° F for 8-10 minutes, or until lightly browned. While bread is baking, slice baby Manchego cheese into 36 small pieces, each about 1 1/2 inches in diameter.
Remove bread from oven. Spread each slice of toasted bread with about 1 ½ tbsp sobrasada, followed by one slice of baby Manchego cheese. Return baking sheet to oven and bake for approximately 10 minutes, or until cheese is melted and slightly browned. Sprinkle each slice with a little chopped parsley if desired.
Serve warm with a cold glass of beer or sidra.
