How To Cook

STEP 1

Cut the Medjool date down the middle and gently remove the pit and stem. Cut the baby Manchego cheese into 12 small rectangles, just long enough to fit inside the dates. Stuff each date with a piece of the cheese, and smooth out to cover the cheese. 

STEP 2

Cut bacon strips in half. Wrap each stuffed date in half strip of bacon and spear with a toothpick. On a rimmed baking sheet lined with parchment paper or a silicone mat, bake in oven at 350° F for 10 to 15 minutes, turning once, until bacon is cooked to your preference.  

Serve hot with cold beer, sangría or Spanish sidra!
