So simple yet so delicious, like most great Spanish dishes, jamón wrapped shrimp is one of our favorites! The Serrano ham crisps on the grill, and the salty ham contrasts beautifully with the rich flavor of the shrimp. The deep smoky taste of Pimentón de La Vera paprika adds the perfect touch. Be sure to grill at high heat so that the jamón will crisp without overcooking the shrimp.
Ingredients
- 1 pound of large shrimp
- 8 oz Serrano ham
- 2 tbsp olive oil
- 1 tsp sweet smoked paprika (Pimentón de La Vera)
- Spanish sea salt and pepper
- Grilling skewers
Preparation
STEP 1
Peel the shrimp, leaving the tails on. Sprinkle with salt, pepper and paprika. Coat in olive oil.
STEP 2
Wrap each shrimp with a piece of jamón, about two inches long, and skewer the shrimp so the ham is held securely around the shrimp. Place the skewers over a high temperature grill and cook for 1 to 2 minutes per side, or until the shrimp is opaque. Serve immediately.
