This size pan makes a paella for up to 12 people. It is the typical hammered steel paella pan of Spain, but even higher quality. The bottom of the pan is dimpled to evenly distribute heat.
All of our paella pans are made by a family in Valencia with over 50 years of experience in producing the finest cookware for paella.
Your paella pan will change color and absorb more flavors with each use. This pan is extra large and should be used with one of our paella burners.
Treat the pan like any steel or cast-iron pan: wash it by hand, then coat it with neutral food-safe oil to stop rust. If it does get rusty, simply clean it with steel wool.

FAQ
FAQ
Does this paella pan fit in a standard oven?
No. This paella pan exceeds the dimensions of most standard ovens and is not suitable for oven use. It’s best used on a stovetop, grill or outdoor burner setup. If oven cooking is required, consider a smaller pan—typically 15 to 16 inches in diameter with low-profile handles—to ensure proper fit.
What material is this paella pan made of?
It’s crafted from durable carbon steel, known for excellent heat conductivity and long-term performance.
What should I do before using my paella pan for the first time?
Add a small amount of water to the pan and heat it on the stove to remove the protective coating and any stickers. Dump the water and repeat the process several times. Then wash the pan with hot, soapy water and dry thoroughly.
Will the pan warp during cooking?
No. This pan is designed to resist warping, even under high heat.
Does the pan change appearance over time?
Yes. Carbon steel pans naturally darken with use and develop a patina that absorbs flavor, much like an Asian wok.
How should I clean the pan after use?
Wash by hand, dry quickly, and coat with a neutral oil to prevent rust.
Is post-use oiling necessary?
Yes. Apply a light coat of oil after each use to protect the surface and maintain seasoning.
What should I do if rust appears?
Scrub the rust off with steel wool, then wash, dry, and reapply oil. The pan will be ready for use again.
Can I season the pan in the oven to help prevent rust?
Yes. Coat with olive oil and place in a 350°F oven for two hours to help build a protective layer.
How should I store the pan?
Keep it in a dry place away from humidity to prevent rust and preserve its finish.
Where can I cook with this paella pan?
It’s ideal for stovetop cooking, outdoor grills or open flame setups. These heat sources accommodate its size and allow for traditional paella preparation.
Is this pan compatible with induction cooktops?
No. This carbon steel pan is not suitable for induction cooking.
Where can I find more information about choosing and caring for paella pans?
