Navajas razor clams are a distinctive delicacy from the cool waters in Galicia. These long slender clams have a rich flavor and firm texture, distinguishing them from most other clams. Serve them straight from the can or sauteed in olive oil with a little garlic.

Navajas are found on the sandy beaches of the Rias, or tidal rivers of Galicia. They are dug out by hand and stored in sea water until the are cleaned of sand. They are then carefully cooked then packed by hand in brine.

The seas off the coast of Galicia in Northwest Spain are cool and rich in nutrients, making them an incredible fishing ground. Conservas de Cambados is located close to one of Spain’s largest Rías (estuaries), known as the 'Ría de Arousa'. Their facilities are very close to where the seafood is harvested, so they are able to use the freshest fish and shellfish available anywhere.

"These were much smaller than our local Willapa clams and buttery delicious."

"Wow, are these ever delicious! So tender and succulent. I planned on using them in a recipe and sharing with friends, but I ended up eating them directly out of the can and did not share a bite. Spain has wonderful canned seafood. Has anyone seen the Anthony Bourdain episode where he marveled over how delicious Spain's canned seafood is? The cans are opened directly in front of patrons at the tapas bars and eaten on the spot. I could eat these every day!"

"I had never had razor clams before and was more than anything curious. I poked and prodded and peeled apart a few as I ate them (think of a kid playing with string cheese), and was rewarded with a cache of tiny white roe inside the stringier, lumpier ends of the clams. I ate them straight from the can to get to know them, and found their taste very clean, briny and the tiniest bit sweet, and their texture softly rubbery (but in that good way, like octopus and squid). I will order these again, and look for a few simple recipes."
