Mahón Cow's Milk Cheese by Subaida, D.O. - 1.1 Pounds

This rich, delicious Mahón cheese has a creamy texture and a pleasant tartness, a perfect pairing for fresh fruit and white wine. Think of a fine cheddar, but more flavorful and complex. Made from fresh cow's milk from the verdant Island of Menorca in the Mediterranean.

Our traditional Mahón cheese by Subaida is made from the freshest grass-fed raw cow's milk. How do we know? They own their own herd! Following ancient tradition, each wheel is hand-formed into a "cushion" shape by wrapping the cheese in a cotton cloth. They are then carefully aged for up to three months.

As it ages, each cheese is hand-rubbed with extra virgin olive oil and mild paprika, imparting a golden color to the rind. The interior is bone colored and creamy and dotted with small holes.

Awarded the protected status of D.O.P. Mahón, recognizing it as a truly traditional Mahón style cheese.

This semi-aged Mahón by Subaida has been awarded with a Gold Medal at the Concours International in Leon, Silver Medal at World Cheese Awards 2017-2018 and Bronze Medal at World Cheese Awards 2018-2019.

How should I store cheese before opening?

Unopened cheese can be stored in the refrigerator for up to 6 months.

What is the shelf life after opening the cheese?

Once opened, it should be refrigerated and consumed within 3 to 4 weeks.

Can I freeze cheese for long-term storage?

Freezing is not recommended, as it can degrade the texture and quality of the cheese.

Is it safe to eat the rind?

Eating the rinds is not recommended.

What should I do if spots appear on the cheese?

Spots can be wiped off using a cloth lightly dampened with olive oil, or trimmed away.

How are perishable items shipped?
