You've probably never tasted this kind of olive oil as it is produced in very small quantities, usually for personal use. It is very costly to make, for if the grower waits just a few days longer until the olive is fully mature and plump, they will get a much higher volume of juice from the same olive.
Knowing that the barely ripe olive yields the best of the vintage, the Vañó family of La Castilla de Canena is not willing to take that short cut for volume. They set aside a portion of the harvest, hand pick the olives as early as is possible and bottle the brilliant green juice.

Each year’s release is commemorated with a newly designed bottle label, featuring a luminary who appreciates fine olive oil. This year's First Day of Harvest label is a freehand sketch by renowned contemporary architect Rafael Moneo, featuring an architectural detail of the Castillo de Canena castle. The drawing pays tribute to Andrés de Vandelvira, the Renaissance architect behind the original design of the castle and the inspiration for last year’s 2024 edition.
Castillo De Canena extra virgin olive oils are produced by the renowned Vañó family in Andalucía. Since 1780, they have produced olive oil near their 16th century castle in the foothills of the Sierra Mágina. The company takes its name from the castle itself.
