Fermín Rodríguez, a master taster, has drawn from the rich variety of olives available in the historic Priego de Córdoba region of Andalucía and blended fresh pressed juice from three types of olives. The oils he blends are Picudo, a fresh, fruity oil; Hojiblanca, a mild, floral oil; and Picual, a peppery, bold oil.

The result is a warm and complex flavor profile, with the perfect balance of fruity, herbal and peppery accents - thereby avoiding the flavor limitations of a single fruit olive oil.

Señorío is a wonderful way to begin savoring the many flavors of olive oil from Spain. Actually, we use Señorío for everything -- for seasoning seafood, sautéing, and for making sauces such as alioli. Most of all, it is great for crisp green salads, and dipping with a crust of bread.
