To prepare this exquisite creation, aged raw sheep's milk is cut by hand and placed in individual jars. The cheese is then covered with cold pressed extra virgin olive oil infused with fresh black truffle. Over time the truffle oil penetrates the aged cheese, transforming it so that it is softer and more delicate. The tangy, rich flavor of the cheese is beautifully balanced by the earthy truffle flavor.
