Ramón Peña chooses only finest little sardines every morning at auction. Within hours the fish are cleaned, then grilled and hand-packed one piece at a time into each tin. Whole Padrón peppers are fried, then one or two are placed on top of the peppers. The tin is filled with olive oil and sealed.
