These tiny sardines from Galicia are so delicate and fresh, you’ve never tasted anything like them. The fish are tender and delicious, prepared just hours after harvest. The Padrón peppers add a bright flavor note. Serve with crisp crackers and a glass of cold beer or Albariño wine.
Ramón Peña chooses only finest little sardines every morning at auction. Within hours the fish are cleaned, then grilled and hand-packed one piece at a time into each tin. Whole Padrón peppers are fried, then one or two are placed on top of the peppers. The tin is filled with olive oil and sealed. The result is an exceptionally fresh sardine, with a tender bite and fresh Padrón pepper taste.
