Juan Carlos Gutierrez Colosia personally selects the best sherry wines to create this incredible vinegar. He adds them to a barrel of exquisite vinegar dating to the time when his father ran the bodega. Each year part of the barrel is drained to fill bottles and young wine is then added to the ancient lineage. You won't find a finer sherry vinegar anywhere.
Sherry vinegars (and wines) are aged in the traditional 'solera' process, where the newest vinegar has its own cask, and is slowly blended with more venerable vinegars in different barrels every year. The result is a perfectly balanced, delicious reserva vinegar.
