The ham from Ibérico de Bellota—made from acorn-fattened, black-hoofed pigs of southern Spain—is one of the country's great (and wildly expensive) delicacies. Eating Ibérico de Bellota is a rare treat, and cooking with it in its uncured form is almost unheard of. That's what makes the lomo, or loin, sold by importer La Tienda so special.
