Aged for up to 5 months, this raw milk cheese has a semi soft, smooth texture with a complex flavor that speaks to the free ranging diet of the local sheep. The precious white truffle comes from the Italian Piemonte, famed for the quality of its truffles. It adds a rich, earthy aroma, but it is not overpowering, and nicely balances the bold flavor of the cheese.
This cheese achieves a complex flavor from the sheep’s diet of herbs and grasses from the remote countryside near the small town of Fuentesaúco, located between Zamora and Salamanca. The artisans at La Antigua use raw fresh sheep's milk and mix it with diced fresh truffles, which infuse the cheese with flavor as it ages.
