Torta del Casar is a creamy raw sheep's milk cheese, famed for its spoonable texture and intense flavor. Bring to room temperature, cut off the top, and spoon onto bread as you would a brie.
But make no mistake, this is no mild brie! Raw milk of pasture-raised ewes is bold in flavor, bordering on the intensity of a blue cheese.
Serve a whole Torta del Casar at room temperature with fresh baked bread slices. When you cut off the top, you will be treated to a glistening bone-white interior that is pudding soft and creamy.
Legend has it that the Torta del Casar cheese originated as a mistake by cheesemakers in Extremadura who were seeking to create a hard cheese. Using thistle rennet, some of their cheeses never fully solidified, so the cheesemakers kept them for themselves, but eventually the secret got out. Since then this special cheese has become world famous, and now has its own protected Denomination of Origin status.
