Discover the flavorful tradition of tagine! This classic Moroccan cooking method undoubtedly influenced the culinary traditions of Spain over the 1,000 year mixing of Moorish and Spanish cultures. This delicious, slow cooked meal of meats, vegetables and spices can now be enjoyed in your home.
The secret to the tagine (the cookware and the final dish) is in its special shape. Moisture condenses on its conical lid, dripping back into the ingredients, keeping them perfectly tender and moist. Lamb shanks, chicken or even beef ribs can be slowly cooked until the meat falls off the bone. Spices such as saffron, cumin and cinnamon add the vibrant flavor of northern Africa.
To serve, simply place the tagine on your dinner table, and lift the lid. Your home will be filled with the wonderful aroma of this very special meal.
Seasoning your tagine: Soak your tagine overnight before its first use. Coat lightly with oil and heat in a 300° F oven for an hour or so (do not preheat the oven) and allow it to cool in the oven. Your tagine will change color and pick up a patina with each use. Do not use over direct heat, use a flame tamer or other barrier when cooking on the stove. Unless otherwise directed, use a low burner setting or an oven temperature of no more than 325° F (160° C) - be patient, tagine cooking is a slow process where the flavors meld. Terra cotta cookware should be heated and cooled gradually as sudden changes in temperature could cause it to crack. If your tagine is not used for a long period of time, season your tagine as above before next use.

"Not 5-star bc you must 'baby' this item or else. I got it on sale at La Tienda and for that I'd give it 10 stars. You must know all the ins and out to prepare this cookware before use, and then again you must not clean it until it's totally cooled down. You must soak it in a sink of water b4 using, and if you don't use it often, you must resoak. However, it is huge and attractive and you can use just the bottom portion as a casserole dish w/o the top. Great gift for the cook who has everything."

"Although the tagine is excellent and I have already made numerous delicious meals in it...I agree with the previous reviewer that instructions on hoe to use the tagine would be extremely helpful to the novice...You can find instructions on-line and be sure to use heat no higher than 350 degrees and to start your meal in a cold oven...place the hot tagine on a towel or trivet after taking it out of the oven to avoid shocking it so that it cracks...I really do love this product and it is perfect for making all types of stews."

"This 12.5 inch Tagine is HUGE! Ordered it Monday night (14 Nov) via the WEB, got it today (16 Nov). Inspected the tagine for craftmanship and it is in mint condition. Now, cure it. I talked to LaTienda about this tagine and one thing they do not have in the conditioning instructions is: thourghly rub the base (bottom) of the tagine with fresh garlic before baking it after soaking. The reason a four star, no instructions on how to use the tagine and no recipes. Also, this tagine is made out of red clay and the bottom has a trapizoid shape."
