The secreto steak of Ibérico pork has incredible marbling. When you add it to the grill, the fat will melt away, bathing the pork in juiciness.
Spanish black Ibérico pigs live on the 'dehesa' rangeland of southwest Spain munching on herbs and grasses. Not only are they the happiest pigs on earth, but this diet adds complex flavor to the pork. And all that exercise imparts the marbling that makes Ibérico so special.
Secreto is a small, thin cut that is hard to find, thus it is named 'the secret.' Grill over charcoal or cook in a cast iron skillet at medium high heat. Serve with a fine red wine and crusty bread to mop up the juices. While it comes from the shoulder area, this cut has a lot of similarities to a tender skirt steak.
The USDA recommends cooking all whole cuts of meat (including pork) to 145°F as measured with a food thermometer placed in the thickest part of the meat.
