Caviar de Erizo is sea urchin roe from Galicia. This delicacy has a soft, buttery texture and a briny, fresh flavor. Preparing sea urchin roe takes skill and time, and the artisans at Los Peperetes are masters of capturing the flavor of freshly cooked seafood. Serve this sea urchin roe with toasted bread or crackers and a glass of white wine.

To create his personal collection of premium seafood, Chef José Andrés has selected the artisan cannery Los Peperetes. This family-owned company is one of the finest examples of a long Spanish tradition of canning gourmet seafood. Spaniards have just as much respect for canned seafood as for fresh, especially for the fish and shellfish of Galicia. Their tiny company painstakingly prepares each batch, choosing each mussel, clam or sea urchin by hand to make sure that it is the finest in the world.

    "Beyond disgusting. I absolutely adore uni, but this crap tastes nothing like uni. In fact, it’s tastes exactly the way that canned cat food smells. It’s tastes only like a can and nothing like sea urchin. This stuff is just plain...NASTY. Major fail on the part of José Andrés et al."

    "Just thought I'd try it. I had an appetizer in mind that uses caviar but I didn't care for it. I used the smoked tuna instead. I think it's quite different from caviar from a fish"
