Salchicha Huachana is a typical sausage originally from Huacho, a city north of Lima, Peru. This juicy pork sausage is delicious on the grill, or fried and served with rice. It is also tasty sauteed with onions.
Salchicha Huachana is flavored with annatto (also called achiote) and aji peppers.

The annatto adds a warm reddish color and a mild nutmeg flavor. The famous aji peppers of Peru add an aroma of tropical fruit and an almost imperceptible spiciness. It also has a nice garlic flavor and is packed in a natural casing. The salchicha comes in one long piece, about 1/2 inch thick, curled into a pinwheel.

Salchicha is usually grilled or fried and served with rice or rolls. We like to spoon on some aji amarillo pepper salsa to kick up the heat a bit and bring out the great Peruvian flavors!

This is a fresh sausage. You can keep it in the refrigerator for a week or in the freezer for up to two months. Cook to an internal temperature of 160 degrees.
