Jamón Ibérico comes from the same genetic stock as the famed Jamón Ibérico de Bellota hams. The only thing that distinguishes this variety from its more renowned cousin is the diet. The pig from which Jamón Ibérico is derived does not graze on a full diet of acorns like the Ibérico de Bellota variety. However, this meat is as close to the prized acorn-feeding pork that you can get. It has the same unique flavor, yet is a bit more affordable.
