From the land of Cordoba comes this exceptional Ibérico de Bellota ham. Each slice is literally melting with sweet acorn flavor. Present this reserve ham as a luxurious centerpiece for your next party or holiday gathering.

Covap is a cooperative of farmers who raise only 100% pure black Ibérico pigs in the rolling ‘dehesa’ rangeland outside of Cordoba. The animals are truly free-range, foraging below the cork trees and holm oaks in family groups. -In the fall they feast on sweet acorns (called ‘bellota’), the key to the exquisite flavor of Jamón Ibérico de Bellota.

What makes Jamón Ibérico de Bellota the finest ham in the world? It is a combination of the noble Ibérico breed, a unique ecosystem that provides the ideal diet of grasses and acorns, a free-range lifestyle and a tradition of curing meats that goes back millennia. Each ham is cured for over 3 years. The hams from this region have a reputation for being sweeter than other Ibérico hams. Slices from this beautifully marbled ham will begin to melt at room temperature because the golden acorn flavored fat is like olive oil – full of beneficial oils and flavors.

This finest of all hams is not very salty, but has an incredibly complex flavor. Savor each slice perfectly paired with a glass of fine wine.

Covap (La Cooperativa Ganadera del Valle de los Pedroches) only offers hams that come from 100% pure bred Ibérico pork, which has an intense, rich flavor - while most Ibérico pigs are crossbred to help them grow faster and produce more offspring.

These pigs spend their lives in family groups, wandering across the rolling hills of the dehesa rangelands, eating herbs, grass and, most importantly, bellotas (acorns). The acorns of the holm and cork oaks are very sweet and full of beneficial fats (read "flavor"!) In the fall, they feast on over 20 pounds of acorns a day.

This is important because the pork becomes marbled with antioxidant rich fat, allowing the hams to be cured for up to 5 years. During that time most of the fat drips away, bathing the ham with incredible flavors.

Mount your Jamón Ibérico de Bellota in a holder and cut delicate thin slices, about the size of a credit card. Serve them on a warm plate to allow the flavors to emerge. Then enjoy with friends and family, and share Spain’s culinary masterpiece.
