Fuet is one of our favorite Spanish sausages, long and slender with a firm texture. This special fuet is made with pasture-raised Texas Iberico® pork blended with ground pecans and a dash of sherry wine. Slice thinly and serve at room temperature with fresh bread and a glass of your favorite Spanish wine.

Fuet originated in Catalunya. It differs from chorizo in that it contains no smoky Pimentón de La Vera paprika. In this way it is similar to salchichón sausage.

The Pyrenees Mountain towns of Osuna and Vic are especially known for excellent examples of these sausages. We were inspired by these famous Catalan recipes and added a touch of Texas flavor.

Texas Iberico® pork is raised on the Trail’s End Ranch in the Hill Country of Texas. There the pure Iberico breed pigs wander the countryside eating acorns, prickly pear and mesquite.
