Made from sunned Pedro Ximénez grapes, this sherry by Bodegas Gutierrez Colosia is naturally sweet and dark ruby in color with an intense finish. With aromas of caramelized raisins and molasses, this complex and very sweet Pedro Ximénez sherry is a natural dessert wine choice. It is best served cold and pairs well with pastries and chocolate.

ABOUT THE PRODUCER:
For nearly 200 years, Bodegas Gutierrez Colosia has grown grapes for sherry in the city of El Puerto de Santa Maria. Located in the province of Cadiz, El Puerto de Santa Maria's unique micro-climate is the perfect environment needed for aging sherry and developing the "flor" layer of yeast that gives sherry its unique taste and aroma.
Bodegas Gutierrez Colosia was founded in 1838 on the mouth of the Guadalete river. The climate and ocean winds here create an ideal environment for the aging of the Bodega's wines.
Traditionally they sold their sherry supply to larger sherry houses who would blend and bottle the wine. In 1997, Bodegas Gutierrez Colosia, followed the lead of other small sherry suppliers and began to bottle the wine themselves in order to preserve the uniqueness of their vineyard's micro-climate.

"this was a very, very nice sherry, similar to the Moscatel Soleado, but the tiniest bit sweeter, I thought, the slightest bit syrupy-er, and with more of a burnt sugar and fig taste than raisin (though there was some raisin too). I thought this was a bit headier than the Moscatel Soleado as well, and with a stronger aroma. I would love to pour a bit of this Colosia PX into a nice, dark cake recipe as well. I highly recommend it to sherry drinkers with a sweet tooth."
