Our artisan chorizo sausage is made with pure breed Iberico pork from animals that wander the Texas Hill Country eating acorns, mesquite beans and prickly pear fruit. Seasoned with smoky paprika from western Spain, this chorizo has a firm texture and rich, aromatic flavor with a touch of heat. This nitrate free chorizo is among the best we have ever tried. Slice thinly and serve with fresh bread and a good bottle of wine.

Texas Iberico® pigs spend their whole lives grazing outside on the Trails End Ranch run by Ashly Martin, a third-generation rancher in Comfort, Texas. The beautiful property is studded with Texas live oak and mesquite trees, as well as prickly pear cactus. The pigs roam together across the pastureland, feeding on acorns, herbs, sweet mesquite beans and prickly pear fruit. This uniquely Texan diet adds complex flavor to the pork, ideal for creating an excellent cured sausage.

Our chorizo is aged in a small curing house in Colorado. Following an old Spanish recipe, the Iberico pork is blended with sea salt and smoked Pimentón de la Vera, Spain’s aromatic paprika that gives chorizo its rusty color. The sausage maker adds a touch of heat, a hint of Texas fire to this otherwise classic Spain-style chorizo.

Several years ago, a herd of purebred Ibérico pigs was flown from Spain to America. Some of them were introduced to a 1500-acre ranch in Texas, a similar countryside to the 'dehesa' forest of western Spain. Texas live oaks produce a tasty acorn similar to those found in Spain. The Ibérico pigs started eating them immediately, and they absolutely devour sweet mesquite beans and prickly pear fruit. Each of these fruits are full of nutrition and antioxidants that add a uniquely Texan flavor to the pork.

All the Texas Iberico™ pigs live outside their entire lives on one ranch, wandering the pasture together with over an acre of rangeland per animal. They are never fed antibiotics. Because of how they are cared for, they have earned the Animal Welfare Approved designation.
