Bonito del Norte will transform your concept of tuna in a can. Each tin reveals a whole cut of fish, bathed in olive oil. Add flakes of this silky smooth tuna to elevate your next fresh salad, or toss it with capers, diced cucumber and parsley for a tuna salad to remember.
Each Bonito del Norte tuna is line-caught individually in the cold waters north of Spain. Once in port in the Basque Country the tuna is poached in sea water, cut by hand and packed in olive oil to keep it moist and flavorful.
Colman Andrews, former Editor-in Chief of Saveur Magazine, writes that Bonito tuna is "one of the great gastronomic pleasures of every day life."
The delicate flavor and texture of Bonito tuna is preserved by a dolphin-safe line-catching method, as it avoids the stress damage caused by harvesting by net. Basque anglers literally catch each tuna by line and hook, pulling them into the boat one by one. There is almost no by-catch, making it the most ecological way to harvest tuna.
Warning: once you taste this silky smooth tuna, you may never buy another tin of ordinary tuna!
White tuna, olive oil and salt.
