5J, or Cinco Jotas, is known as the premier brand of Ibérico ham. In fact, 5J's hometown of Jabugo is now synonymous with top quality Ibérico ham. Many of our customers call and ask explicitly for Jabugo ham.
Cinco Jotas raises only 100% pure bred Ibérico pigs that live their entire lives wandering the oak forests of western Spain. The hams come from an ancient breed of pig, Cerdo Ibérico, which has roamed the woodland meadows of western Spain for thousands of years. Jamón Ibérico de Bellota is the pride of Spain, and Spaniards consume the vast majority of the limited number of hams produced in their own country.
These pampered piggies wander across the "dehesa," a unique habitat of grass fields and oak trees. There they feast upon acorns which are falling in abundance from the holm oak and cork trees. These 'bellotas' (Spanish for acorn) are their favorite food, and they add up to two pounds of weight each day! These acorns are packed with healthy antioxidants that provide the special flavor and rich texture of the hams.
The final Jamón Ibérico de Bellota hams from 5J are marbled with rich golden fat infused with the flavor of the sweet bellota acorns. Remarkably, a good portion is mono-unsaturated, similar to healthy extra virgin olive oil. Sliced paper-thin, it glistens at room temperature and provides an inimitable rich nutty flavor and tender texture.
Serve thinly sliced on a warm plate. You can see a video with slicing instructions on this page. When you receive your jamon, remove it from its plastic wrapping and allow it to breathe for a few hours as it warms to room temperature. Mount in a ham holder, and you are ready to slice!
Store bone-in jamón in a cool ventilated place, either in a holder or hung by the rope provided. Always cover the sliced area with plastic wrap to preserve freshness and moisture. The first slice should be discarded if the meat has been exposed for some time.
Mold: Mold may appear on whole hams, either in black spots or as a white film. This penicillin-like mold is completely harmless. It can be removed with a clean cloth.
Small white spots in the meat: These are small "chalky" granules that form between the muscle fibers during the curing process. They are healthy amino acids found in aged meat and cheese products and are proof of the quality of the ham.
Fat: Ibérico hams tend to be rather fatty, which protects the meat and helps it keep longer.
Pure breed Iberico pork, sea salt, seasoning (sugar, sodium citrate, potassium nitrate, sodium nitrite).
