Handmade by local women in Oikina, a village in the Basque country, our croquettes are individually made by Yurrita with only the very best all-natural ingredients. The filling is made with fresh milk delivered daily from a local creamery and the olive oil used is always extra virgin. Made with bacalao (salt cod), these are probably better than any croquetas you'll find anywhere, even in tapas bars in Spain!
It couldn't be easier to enjoy this delicious Spanish tapa at home. Using a deep fryer or a pan filled with at least 2 inches of oil preheated to 375 degrees, cook in small batches for 3 to 5 minutes. Remove the croquetas to a serving plate with a slotted spoon and serve immediately.
Keep frozen until ready to cook.

"A little embarrassed to say that I did not eat Croquetas de balacao while I spend 1 month in Spain. So thankful that la tienda sells these that I can try them without traveling. Crunchy on the outside and soft and melting on the inside. It needs dipping sauce. Fill your pan with oil to a level that covers the bottom half of the Croquetas, and wait until it's hot to add them. And as they turn golden, roll them over to fry the other half side. Do not drown these in the oil or they will turn out to be soggy. These Croquetas de balacao taste better than the Croquetas that I eat around tapas bars and Latin American restaurants in my town. "
