This whimsical pasta is made by hand at Sandro Desii, a premium pasta maker in Barcelona. Made with durum wheat and squid ink, it has a rich seafood flavor. It is ideal as the base for sautéed fish or shrimp, or a creamy pasta dish like pasta alfredo.
This 'angulas de trigo' pasta is shaped to look like baby eels, a treasured dish from northern Spain. To achieve this appearance, a sheet of fresh pasta is covered with a sheet of pasta infused with squid ink. The pasta is dried at low temperature, then sliced into tiny little 'angulas.'
