Good coffee is ubiquitous in Spain. Whether it be a 'cafe con leche' or 'cafe solo', having a cup once or twice a day is a ritual. The secret to Spanish coffee is the roasting - full and rich, without over-roasting. Some coffees are roasted using the Torrefacto process, where some beans are glazed with sugar during roasting. This creates a deep, dark coffee full of the flavor that is uniquely Spanish.
