Amontillado Sherry takes its name from the Montilla region of Spain where it was originally produced. Amontillado has a darker color and richer flavor than Fino Sherry. It is usually served lightly chilled. Amontillado is typically served as an aperitif with almonds, olives and many types of cheeses. It can also be served with chicken or rabbit and was classically paired with soups such a beef consomme.

Osborne's sherry casks are made of American oak that allows the wine to "breathe" through the wood's pores. Casks are never filled to the brim and the top is never fully sealed. The air that seeps in guarantees some oxidation - a key to making sherry wine.
