Handcrafted by the renowned J.H. Henckels Company, the set includes four forged knives, each with a different purpose. The medium sized knife is used to skin and de-fat the ham in preparation for slicing. The smallest knife is used to carefully cut around the different bones that one encounters while slicing a ham or paleta. Lastly the set contains two long, thin slicing knives so that you can always be assured of a sharp knife when you are ready to serve a crowd of jamon lovers.
The knives are accompanied by a steel sharpening stick with a sturdy black handle as well as a pair of small tongs which are used to delicately place the small slices of jamon onto an awaiting plate.
One of the most interesting components of this set is a steel, chain mail glove which will protect your hand while it grips and steadies the ham that you are slicing. This is a really important item since to achieve paper-thin slices, you have to work with a very sharp set of knives.
The knives, the sharpener, the serving tongs and the chain mail glove each fit into individual pockets in the black vinyl carrying case. A top protective flap keeps everything in place and the satchel, emblazoned with the 5J logo, is closed with two substantial velcro straps.
