The traditional Spanish potato tortilla is one of Spain's signature dishes, and its most famous comfort food. Ask a Spaniard and she will invariably say that her mother's tortilla is the best. Served hot or cold, this potato and egg treat is always popular in homes and tapas bars across the country.
This durable, non-stick tortilla system will make a perfect tortilla every time. The two pans interlock with a stainless steel clasp for easy flipping. The bottom pan is slightly larger so the top pan fits securely. Flipping the tortilla is the most challenging part of the recipe, and this innovative design makes it easy. Each pan system comes with a recipe in English and Spanish.
Tortilla literally means "little cake" and in Spain this means a delicious savory combination of potatoes and eggs cooked in olive oil. You may add diced serrano ham, chorizo, onions or other vegetables to add a more dynamic flavor. Spanish tortillas are completely different from the Mexican variety made of corn or flour.

"After a term as a college student in Spain some 35 years ago, I was curious to recreate the tapa I'd most often been served whether the venue was a bar, restaurant, tavern or kiosk, the ubiquitous Tortilla Espanola. I had tried a frittata recipe once or twice using my 10" iron skillet and a large plate, with disappointing results owing mostly to the difficulty in handling them while in the air.
This two-sided Tortilla pan (mine has been christened "Janus") is of sufficiently sturdy construction but it's much lighter and easier to handle than an iron skillet -- aluminum, I'm guessing. That said, attention must still be paid when doing the inversion, particularly the first one, or a liquid mixture of very hot oil and egg can leak out from either side. The gentler your touch on the flip-over, the better your results will be. A firm grip (using a tea-towel doesn't hurt) with both hands on the double handle also insures the pans stay safely clipped together while in action.
I don't know anything about the pan's non-stick coating, but given the amount of oil the recipe typically calls for it should last forever. But as with all non-stick coatings, NEVER use soap or detergent or an abrasive on it when you clean the pan. A dribble of very hot water and your fingertips (wear gloves!) are all that are needed to get it perfectly clean; a soap-free sponge will remove any remaining residue.
Avoiding soap has made various non-stick pots and pans of mine last about twice their typical lifetimes.
My only grumble about the pan is that it's a bit awkward to store; it's too large for the drawer under the stove, and it doesn't look as dressy as the iron & steel pans on the hooks up above. To put it up high I also need to detach it and hang both pans separately, as together they're too thick to fit on a single hook, so it usually ends up in the lower cabinet with the stockpots and rice cooker.
