Castilla y León is the largest region of Spain, sometimes known as “Old Castile.” These two kingdoms merged in 1230 and this area is the cradle of Spain as a nation and Castillian as a language. This region north of Madrid has a hearty and sustaining cuisine, a result of its long, cold winters. Garbanzo stews are among its most famous dishes, along with roasted suckling pig and lamb, sopa de ajo (a poor man’s garlic soup, now being re-imagined by Spain’s famous chefs), cured sausages and hams, along with all kinds of bean stews.
