Stewed Peppers
 A colorful, tasty garnish with a touch of sweetness. Makes 4 servings. Prep Time: 30 min. Cook Time: 2 hours

Ingredients:
1 red pepper 1 green pepper 1 yellow pepper 3.5 oz sugar 1 pinch of salt 3.5 fl oz oil 1 sprig of thyme
Preparation:
Wash the peppers and blanch or char over a flame so that they can be easily peeled. Remove the seeds and cut into strips. Place in a pan with the sugar, salt, thyme, and oil. Cover the pan and place over a low heat. Cook for about two hours. Remove from the heat and leave to cool. This garnish goes especially well with fish or fatty meats such as pork or duck.
