Chickpea flour fritter of Guadalquivir shrimp and onionTortillita de camarones
Servings: 4 Ingredients:12 oz chickpea flour 9 oz shrimp 1 onion, chopped Parsley to taste 1 tsp pimentón Salt Olive oil Preparation:Boil the shrimp in water. Place the flour in a bowl with the parsley and salt and add enough of the shrimp water to make a thin paste. In a small frying pan, heat a little olive oil until smoking hot, then pour in a little of the mixture, tilting the pan to spread it, and then place a tablespoonful of onion and another shrimp on top.
