Rich, tender fresh scallops are one of our favorite seafoods. They are perfectly balanced in this recipe with salty, smoky bacon made with Ibérico pork bellies. They are so simple to make and are an amazing appetizer or party bite.

How To Cook

STEP 1

Preheat oven to 350°F. 

STEP 2

Line baking sheet with parchment paper. Place bacon strips on parchment paper; bake until just beginning to get golden around the edges but still pliable, 12-15 minutes. Remove from oven and set aside until cool enough to handle. Turn oven to broil. 

STEP 3

Wrap each scallop in a piece of bacon and secure it with a toothpick. Place the bacon wrapped scallops onto a baking sheet. Cook 8-10 minutes or until bacon is cooked through, turning once.

Made these as an appetizer for a dinner party. Swoon-worthy was a very good description, my guests ate them all in a few minutes and I wish I'd made more.
